I am aware that the manufacture states to run this skimmer at 6-6.5 inches of water, but wondering if i could get away with 7-8 inches with the stand pipe or gate valve all the way open.

Its tough to say as everyone's water is different. It may be able to be done at lower salinity and organic levels. In my experience the 3000 does best in around 6.5"
