Hello and thank you for taking the time to help me. I have a 30 gallon saltwater tank. Ive had my skimmer for about 8-9 months and never had an issue. I did a water change tonight and when I plugged it back in, it started to overflow. I didn't do anything different

Most likely something in the new water added to the tank caused the overflow. If you added any chemicals, new media, carbon, etc... or changed the water level in the tank then your skimmer will overflow. Raise the cup to the highest point, wait a few days and the skimmer should return to normal operation. Then you can lower the cup and dial in the skimmer again.
