I am programming my Maxspect Etheral LEDs and I am having problems figuring out how to automatically program the mood/moon lights to come on and off at a specific time (to run through the night). Is there a way to do this?

Manual mode will just give you a fixed light output and not ramp up and down. Stick with editing one of the profiles to your liking.

The first and last programs need to be set at 1% on one of the blue channels to have moonlight overnight.
